About the Coffee
This lot is one of the experimental lot processed by Torch Coffee Lab to assess the impact of Fruit in Co-fermentation process. Fruit Juniper Berry is mixed with water and fermented to achieve the ideal Brix and pH levels. This mixture is then added to coffee cherries for over anaerobic fermentation before drying. This special process has achieve interesting flavor notes to this coffee so that flavor of Gin really stands out during Yun Dian internal cupping test.

This special washing station is part of Torch coffee family - founded by the legendary Q-grade mentor Marty Pollack.
In 2014, Marty moved to Pu'er in Yunnann, where he engaged with local coffee farmers to share his knowledge of coffee beans while simultaneously learning the requirements and processes for establishing a business. By 2015, Torch Coffee Lab was officially registered in Simao District, Pu'er City, Yunnan Province.
With accumulated industry experience and substantial mentoring qualifications, Martin’s team began focusing on the fresh fruit processing stage. Through continuous experimentation, trial, and challenge, they explored new directions and goals. “Our business may not be well-known, but we have dreams. We try everything to bridge the gap between Yunnan coffee farmers and consumers and to see a future where all 1.4 billion people in China can enjoy a quality cup of Yunnan coffee.”
Marty persistent efforts have brought noticeable improvements to the quality of Yunnan’s coffee beans in the past 10 years. Currently, Torch Coffee Lab has ten SCI-certified mentors, two CQI Q graders, and two SCA-certified trainers. Over 1,000 students attend each year, including baristas, roasters, coffee farmers, trade buyers, quality controllers, and business operators. By combining theory with practice, Torch Coffee Lab provides comprehensive support and skills development for coffee professionals across the industry especially in Yunnan.
